BBQ Shrimp Boil Packets

Ingredients
- 2 lbs large shrimp, peeled, deveined
- 2 garlic cloves, minced
- 2-3 smoked andouille sausages, thinly sliced
- 3 ears corn, each cut crosswise into 4 pieces
- 1 lb red potatoes, chopped into .5” pieces*
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. Old Bay seasoning
- Kosher salt
- Freshly ground black pepper
- 2 Tbsp. finely chopped fresh parsley
Directions
Prepare a grill for high heat; heat 5 minutes. While the grill is heating up, dice the potatoes into .5” pieces— *size matters: too small and they will fall apart, too large and they won’t cook evenly. Cut each ear of corn into 4 pieces. Cut the sausages into thin slices. Cut 6 sheets of foil about 18” long.
Drizzle with oil, then add Old Bay seasoning, salt, and pepper. Gently toss to combine. Divide the shrimp, garlic, sausage, corn, and potatoes evenly into each of the foil sheets. Top each with parsley, lemon, and butter.
Fold the foil packets crosswise over shrimp mixture to cover, rolling the top and bottom edges to seal them. Place the foil packets on the grill and cook until just cooked through, about 10-20 minutes.
