Käsespätzle Difficulty: Beginner  |  Prep Time: 25 Minutes  |  Serves 4

Ingredients:
  • 4-1/2 cups cooked spaetzle noodles, store-bought or homemade (link homemade to Spaetzle recipe)
  • 10.5 ounces Emmental cheese, grated
  • 1 large onion, sliced
  • 4 tablespoons butter, divided
  • Salt & pepper to taste
  • Chopped parsley for garnish, optional

Slice your onion into thin rings. In a medium-sized frying pan, heat 2 tablespoons of butter. Add the onion rings and sauté them over medium heat until brown stirring regularly, about 8 minutes.

In a separate, larger frying pan, melt the other 2 tablespoons of butter and add your already prepared spaetzle. When the spaetzle are warm, slowly sprinkle a little bit of grated cheese on top and stir. Sprinkle cheese in batches, allowing the cheese to melt in slowly before adding more. Repeat until all of the cheese has been added to the pan, stirring regularly until it has fully melted.

Add salt and pepper to taste. Garnish the cheesy spaetzle with crispy onions and freshly chopped parsley, serve!
