Spiced Coffee-Rubbed Salmon 
Difficulty: Beginner  |  Prep Time: 15 Minutes  |  Serves 4-6

Ingredients:
  • 1-1/2 pounds fresh salmon
  • 1 tbsp finely ground coffee
  • 1 tbsp ground coriander
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 2 tbsp kosher salt
  • Non-stick cooking spray

Directions

Preheat the oven to 375°F. While the oven warms up, mix the ground coffee, coriander, paprika, garlic powder and kosher salt.

Place a piece of heavy-duty aluminum foil on a baking sheet and spray it with the non-stick cooking spray. Place the salmon, skin side down, in the middle of the foil. Fold the foil sides and ends up to make a shallow pan around the salmon, leaving a small margin around the fish.

Dust the salmon with the coffee-rub and pat the seasoning into the fillet. Allow the salmon to marinate in the rub for 10 minutes. Once the fish has had time to marinate, place the baking sheet in the oven and cook for 12-15 minutes, until the fish is lightly translucent in the center Remove from the oven and let rest a few minutes before serving.
