Cod Coconut Curry With Tzatziki Sauce

Ingredients:
  • Cod Coconut Curry
  • 1 lb cod fillets, cut into ½-inch pieces
  • 1 15oz can coconut milk
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 tsp minced garlic
  • 2 tsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 cup cauliflower florets
  • 1 red bell pepper, chopped
  • 1 tsp Serrano pepper, finely diced
  • 1 tsp salt
  • Tzatziki Yogurt
  • 1 cup Greek yogurt
  • 1 cup grated cucumber
  • ¼ tsp garam masala
  • ½ tsp salt
  • ½ tsp lemon juice
  • Steamed basmati rice, for serving

Directions Heat the olive oil in a large sauté pan over medium heat. Add the onion and cook until softened, 3 minutes. Add the garlic and ginger and sauté for a minute, until aromatic. Add the turmeric and cumin. Add the cauliflower, and bell pepper and toss to coat in spices. Pour in the coconut milk and Serrano pepper and bring to a low simmer. Cover and simmer for 5 minutes. Next, stir in the cubed cod and salt. Simmer for 5 minutes, or until the fish is cooked through. While the cod is simmering, in a medium sized mixing bowl, stir together the yogurt, cucumber, salt, lemon juice, and garam masala. Serve the cod Coconut Curry spooned over steamed basmati rice with the yogurt cucumber sauce on the side or on top.
