Warm Savoy Cabbage & Apple Slaw 
Difficulty: Beginner  |  Prep Time: 15 Minutes  |  Serves 4-6

Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 1 small yellow onion, peeled and small diced
  • ½ small Savoy cabbage, cut into quarters, cored, thinly sliced (4 cups)
  • 1 sweet apple, peeled, cored and grated
  • Kosher salt and finely ground black pepper
  • 1 teaspoon white wine or sherry vinegar (or more to taste)

Heat olive oil in a non-stick sauté pan over medium heat. Add onion and sauté until tender, about 3 minutes. Stir in the cabbage and apple and season with salt and pepper. Sauté slaw, stirring and tossing until crisp tender, approximately 4-5 minutes. Stir in vinegar. Taste and adjust seasoning as necessary and serve hot or at room temperature.
