Cecilia Chiang
Cecilia Chiang introduced America to authentic Chinese food with the
opening of the Mandarin in 1961. With the publication of The
Mandarin Way in 1974, Cecilias career blossomed to include television appearances
and cooking demonstrations. Although the Mandarin closed in 2006,
Chiang continues to consult for restaurants, including Betelnut and
Shanghai 1930. Her son co-founded the successful restaurant chain
P.F. Changs.

Peter Reinhart
Peter Reinhart is a baking instructor and faculty
member at Johnson & Wales
University in North Carolina. He founded the award-winning Brother
Junipers Bakery in Santa Rosa and has authored seven books, including
the James Beard and IACP award-winning Bread Bakers
Apprentice. Peter
also won the James Beard Foundations National Bread Competition.
